A hearty chili made with smoked sausage-easy to prepare in less than 30 minutes! Shhhh…don’t tell… a splash of vinegar is the secret ingredient.
Southwestern Chili
1 tablespoon olive oil
1 small onion(4 oz.) diced
1 teaspoon minced garlic
1 can black beans, rinsed, drained
1 cup frozen corn
2 – 15 oz. cans petite diced tomatoes
2 – 15 oz. cans chili beans
1 lb. smoked sausage link, diced
3 cups water
¼ cup white vinegar
1-2 tablespoons chili powder
1 teaspoon ground cumin
1 -2 teaspoons Kosher salt
Toppings: shredded cheese/sour cream/crushed Corn Tortilla Chips
Sauté onion, garlic in olive oil. Add the rest of the ingredients and simmer for 30 min.
Spoon into bowls and garnish with your choice of toppings.
Cook’s Note:This is also yummy served over a bed of pasta, i.e. spaghetti.
