Take your dipping up a notch by adding a splash of sherry vinegar to the mix!
Sherried French Onion Dip
1 large sweet onion (i.e. vidalia)1 lb or 2 cups chopped
1 tablespoon unsalted butter
1 tablespoon olive oil
½ cup sour cream
½ cup mayo
1 teaspoon fresh lemon juice
1 tablespoon sherry vinegar
½ teaspoon Kosher salt
¼ teaspoon freshly ground white pepper
Peel and chop onion, small dice. Melt butter with oil in a large skillet. Saute onion until just starting to caramelize. Remove from heat. In a mixing bowl combine cooked onion, sour cream, mayo, lemon juice and sherry vinegar. Season with salt/pepper. Refrigerate until ready to use. Serve with chips of choice.
Yield: 1 1/2 cups
