A bubbly refreshing drink that works for any gathering. Make it by the pitcher or by the glass, with or without alcohol, with or without sugars…..so versatile and easy.
- 2 cups fresh raspberries, divided
- 1 cup mint leaves + some for garnish
- 2 cups apple juice, chilled (or prosecco)
- 1 liter of lemon lime soda, chilled
- 2 fresh limes, sliced
Directions:
- Place mint leaves in the bottom of the pitcher along with 1 ½ cups of the raspberries. Muddle (gently crush with wooden spoon).
- Add apple juice (choose a “light” variety for less natural sugars).
- Top with lemon lime soda (choose diet variety if not wanting the added sugar).
To serve:
Pour into a glass of choice (I love champagne flutes) and top off with reserved raspberries, lime slices and mint leaves…and don’t forget a pretty straw!
Yield approximately 2 quarts
